Young neeps stewed
in butter
makes 4 Servings
time: takes approx 35 to 45 minutes to stew turnips
2 lbs baby neeps
2 oz butter
4 large or 8 small/medium pork cutlets
salt and white pepper
Take the turnips; cut them into small squares or make them of any shape
that may be preferred.
Dissolve two ounces of fresh butter in a saucepan sufficiently large to
hold the vegetables in a single layer; put in the turnips and simmer them
very gently until they are tender, without being broken.
While the turnip simmers gently, grill or fry pork cutlets.
A few minutes before they are ready, season with a little salt and white
pepper.
Place turnip in the centre of a dish, and arrange fried or grilled pork
cutlets neatly around them. Delicious served with creamed potatoes!
